- In a large nonstick pan, heat oil over medium heat. Add the sweet potato and stir well to coat it in the oil. Sprinkle with salt and black pepper and stir well.
- Cook for 20 to 25 minutes, stirring frequently until the sweet potatoes are tender in the middle and crisped on the outside to your liking.
- Combine the rice, water, garlic powder, and thyme in a pot, and bring to a boil. Cover, reduce heat to low, and simmer for 25 minutes. Remove from the heat and let it sit, covered for 10 more minutes. Fluff with a fork.
- Heat 1 tablespoon of olive oil in a large skillet. Season chicken with salt, pepper, garlic powder, and ginger.
- Add chicken to skillet and cook for 6 to 8 minutes per side, or until cooked through. Let rest for 10 minutes, then slice.
- Whisk together garlic, soy sauce, honey, and lime juice until combined. Whisk in sesame oil and olive oil until smooth.
