In a large nonstick pan, heat oil over medium heat. Add the sweet potato and stir well to coat it in the oil. Sprinkle with salt and black pepper and stir well.
Cook for 20 to 25 minutes, stirring frequently until the sweet potatoes are tender in the middle and crisped on the outside to your liking.
For the Rice
Combine the rice, water, garlic powder, and thyme in a pot, and bring to a boil. Cover, reduce heat to low, and simmer for 25 minutes. Remove from the heat and let it sit, covered for 10 more minutes. Fluff with a fork.
For the Chicken
Heat 1 tablespoon of olive oil in a large skillet. Season chicken with salt, pepper, garlic powder, and ginger.
Add chicken to skillet and cook for 6 to 8 minutes per side, or until cooked through. Let rest for 10 minutes, then slice.
For the Dressing
Whisk together garlic, soy sauce, honey, and lime juice until combined. Whisk in sesame oil and olive oil until smooth.
