Ingredients
For the Sweet Potatoes
  • 1 sweet potatopeeled and diced
  • 1/2teaspoon Salt
  • 1/4teaspoon black pepper
For the Chicken
  • 1tablespoon olive oil
  • 2 chicken breastssliced
  • 1/2inch gingerpeeled and minced
  • 1/2teaspoon garlic powder
For the Dressing
  • 1 garlic cloveminced
  • 1tablespoon soy sauce
  • 1tablespoon honey
  • 1/4cup lime juice
  • 1tablespoon sesame oil
  • 1tablespoon olive oil
For the Rice
  • 2cups long grain rice
  • 4cups vegetable broth
  • 1teaspoon garlic powder
  • 1teaspoon dried thyme
For the Bowl
  • 1 red oniondiced
  • 1/2teaspoon Salt
  • 1/4teaspoon black pepper
  • 2cups baby spinach
  • 1/2bunch Fresh cilantrochopped
  • 1teaspoon white sesame seeds
  • 1 avocadothinly sliced
Instructions
For the Sweet Potatoes
  1. In a large nonstick pan, heat oil over medium heat. Add the sweet potato and stir well to coat it in the oil. Sprinkle with salt and black pepper and stir well.
  2. Cook for 20 to 25 minutes, stirring frequently until the sweet potatoes are tender in the middle and crisped on the outside to your liking.
For the Rice
  1. Combine the rice, water, garlic powder, and thyme in a pot, and bring to a boil. Cover, reduce heat to low, and simmer for 25 minutes. Remove from the heat and let it sit, covered for 10 more minutes. Fluff with a fork.
For the Chicken
  1. Heat 1 tablespoon of olive oil in a large skillet. Season chicken with salt, pepper, garlic powder, and ginger.
  2. Add chicken to skillet and cook for 6 to 8 minutes per side, or until cooked through. Let rest for 10 minutes, then slice.
For the Dressing
  1. Whisk together garlic, soy sauce, honey, and lime juice until combined. Whisk in sesame oil and olive oil until smooth.
