Ingredients
- chicken breasts sliced into strips
- 1/2 red onion thinly sliced
- 3 bell peppers thinly sliced
- flour tortillas
- 1 clove garlic
- 1 15 oz. can black beans rinsed and drained
- 1 1/2 cups sharp cheddar cheese
- sour cream
Marinade
- 2 tablespoons olive oil
- 3 tablespoons brown sugar
- 2 tablespoons orange juice
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon Dijon Mustard
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 tsp EACH garlic powder, onion powder, salt
- 1/2 tsp EACH smoked paprika, dried oregano
- 1/4 teaspoon pepper
Chipotle Lime Crema
- 1 cup sour cream
- 2 tablespoons mayonnaise
- 1-2 tablespoons lime juice to taste
- 1/2 teaspoon Salt
- 1/4 - 1/2 teaspoon chipotle chili powder
- 1/4 cup packed cilantro finely chopped
- 1/2 teaspoon Salt
- 1/4 - 1/2 teaspoon chipotle chili powder
- 1/4 cup packed cilantro finely chopped

Instructions
- Add all marinade ingredients to a bowl and add chicken, refrigerate. Then prepare vegetables. Heat pan with olive oil and add chicken. Sear, then add bell peppers, onion and garlic. For the crema whisk together all ingredients. Refrigerate until ready to use. For each wrap, layer black beans, Fajita Chicken and Vegetables, sour cream, and cheese. Tightly roll up Wraps and serve.
