Chicken Fajita Wraps with Chipotle Lime Crema

Ingredients
  • chicken breasts sliced into strips
  • 1/2 red onionthinly sliced
  • 3 bell peppersthinly sliced
  • flour tortillas
  • 1clove garlic
  • 1 15 oz. can black beansrinsed and drained
  • 1 1/2cups sharp cheddar cheese
  • sour cream
Marinade
  • 2tablespoons olive oil
  • 3tablespoons brown sugar
  • 2tablespoons orange juice
  • 2tablespoons lime juice
  • 2tablespoons soy sauce
  • 1tablespoon Dijon Mustard
  • 1tablespoon chili powder
  • 1 1/2teaspoons ground cumin
  • 1tsp EACH garlic powder, onion powder, salt
  • 1/2tsp EACH smoked paprika, dried oregano
  • 1/4teaspoon pepper
Chipotle Lime Crema
  • 1cup sour cream
  • 2tablespoons mayonnaise
  • 1-2tablespoons lime juiceto taste
  • 1/2teaspoon Salt
  • 1/4 – 1/2teaspoon chipotle chili powder
  • 1/4cup packed cilantrofinely chopped
  • 1/2teaspoon Salt
  • 1/4 – 1/2teaspoon chipotle chili powder
  • 1/4cup packed cilantrofinely chopped
Instructions
  1. Add all marinade ingredients to a bowl and add chicken, refrigerate. Then prepare vegetables. Heat pan with olive oil and add chicken. Sear, then add bell peppers, onion and garlic. For the crema whisk together all ingredients. Refrigerate until ready to use. For each wrap, layer black beans, Fajita Chicken and Vegetables, sour cream, and cheese. Tightly roll up Wraps and serve.
