Ingredients
Marinade:
  • 1 garlic cloveminced
  • 1/2 lemonjuiced
  • 1tablespoon ground coriander
  • 1tablespoon ground cumin
  • 1tablespoon ground cardamon
  • 2teaspoons smoked paprika
  • 1/2teaspoon Salt
  • 1/4teaspoon black pepper
  • 3tablespoons olive oil
Yogurt Sauce:
  • 1cup plain yogurt
  • 1clove garlicminced
  • 1teaspoon cumin
  • 1/2 lemonjuiced
  • 1/4teaspoon Saltor as needed
  • Dash black pepperor as needed
To Serve:
  • 8-12 Pita Bread
  • 1head Romain lettucechopped
  • 2 roma tomatoesdiced
  • 3tablespoons olive oil
  • 1cup Greek yoghurt
  • 1clove garliccrushed
  • 1teaspoon cumin
  • ½ lemonjuiced
  • teaspoon ¼saltor as needed
  • Dash black pepperor as needed
  • Homemade pita bread
  • Romain lettucechopped
  • 2 roma tomatoesdiced
Instructions
Chicken Marinade:
  1. Combine all the marinade ingredients in a bowl. Stir until the ingredients are mixed completely. Add the chicken and use your hands to make sure each piece is coated.
Yogurt Sauce:
  1. Combine the Yoghurt Sauce ingredients in a bowl and mix. Cover and put in the fridge until you are ready to serve.
Cook Chicken Shawarma:
  1. Heat on medium-high a pan on the stove. Preferably a large heavy based but any will do! You should not need to oil it because the marinade has oil in. Place chicken in the pan cook the first side for 4 to 5 minutes until nicely charred, then turn and cook the other side for 3 to 4 minutes. The second side takes less time to cook. Remove chicken from the pan and cover loosely with foil. Set aside to rest for 5 minutes.
To Serve:
  1. To make a wrap, get a piece of flatbread and smear with yogurt sauce. Top with a bit of lettuce and tomato and Chicken Shawarma. Roll up and enjoy!
