Recipe for the week of March 31-April 4, 2025

In a large non-stick pan, heat 1 tablespoon of oil over medium-high heat. Add onions, corn, cook and stir until tender, 8-10 minutes. Add chicken, enchilada sauce, cilantro, salt and pepper, heat through. Put it aside and let rest.
For the Quesadilla
Brush remaining oil over 1 side of each tortilla. Place a tortilla in a hot pan, oiled side down. Sprinkle half of the tortilla with ½ cup cheese and top with 1 cup chicken mixture, remaining cheese and remaining tortillas, oiled side up. Fry until golden brown and cheese is melted, 7-9 minutes. Serve with sour cream.
