Chicken Verde Quesadillas

Ingredients
Quesadillas
  • 2tablespoons olive oildivided
  • 1 yellow onionthinly sliced
  • 1cup canned corn
  • 1 green bell pepperthinly sliced
  • 1pound Chicken breastdiced
  • 3/4cup green enchilada sauce
  • 1/2bunch cilantrominced
  • 1/4teaspoon Salt
  • 1/8teaspoon pepper
  • 8(10 inch) flour tortillas
  • 4cups shredded mozzarella cheese
  • 1tablespoon sour cream
Pico De Gallo
  • 1 white onionfinely chopped
  • 1/4cup lime juice
  • 3/4teaspoon Saltmore to taste
  • 4 roma tomatoeschopped
  • 1bunch cilantrochopped
Instructions
For the Filling
  1. In a large non-stick pan, heat 1 tablespoon of oil over medium-high heat. Add onions, corn, cook and stir until tender, 8-10 minutes. Add chicken, enchilada sauce, cilantro, salt and pepper, heat through. Put it aside and let rest.
For the Quesadilla
  1. Brush remaining oil over 1 side of each tortilla. Place a tortilla in a hot pan, oiled side down. Sprinkle half of the tortilla with ½ cup cheese and top with 1 cup chicken mixture, remaining cheese and remaining tortillas, oiled side up. Fry until golden brown and cheese is melted, 7-9 minutes. Serve with sour cream.
