Cinnamon Waffles with Southern Fried Apples and Whipped Cream

Ingredients
Waffles
  • 3/4cup all purpose flour
  • 1tablespoon brown sugar
  • 1teaspoon Cream of Tartar
  • 1/2teaspoon baking soda
  • 1/2teaspoon Salt
  • 1 egg
  • 3/4cup buttermilk
  • 1/2teaspoon vanilla extract
  • 1 can nonstick cooking spray
  • 2tablespoons butter
Southern Fried Apples
  • 1 granny smith applesfirm, medium size, sliced
  • 1/4cup buttermelted and cooled to room temperature
  • 2tablespoons sugar
  • 1tablespoon brown sugar
  • 1teaspoon ground cinnamon
  • Dash nutmeg
Whipped Cream
  • 1/3cup heavy cream
  • 1tablespoon powdered sugar
  • 1/4teaspoon vanilla extract
Instructions
Waffles
  1. In a medium mixing bowl, sift dry ingredients together.
  2. In a separate bowl with a handheld mixer, beat together the eggs, buttermilk, melted butter, and vanilla until frothy, about two minutes on high speed.
  3. Pour the wet ingredients into the dry and stir until nearly smooth. Do not over stir – a few small lumps are okay,
  4. Add 1/2 to 1 cup batter to waffle iron and cook according to manufacturer’s instructions, about 5 minutes.
  5. While waffle is still hot, sprinkle cinnamon sugar topping on both sides of waffle. Repeat the last two steps until the batter is gone.
Southern Fried Apples
  1. Wash the apples. Remove the cores. slice, and set aside.
  2. Over medium heat, add the butter, sugar, brown sugar, cinnamon and nutmeg.
  3. Stir well until butter melts and sugars dissolve. If mixture is thick, thin it down with a small amount of water.
  4. Add the sliced apples. Stir well to coat. Stir often and cook apples until tender.
Whipped Cream
  1. Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium peaks form, about 3–4 minutes. Medium peaks are between soft/loose peaks and stiff peaks and are the perfect consistency for topping and piping on desserts. If you accidentally over-whip the cream, and it looks curdled and heavy, pour in a little bit more cold heavy cream, and fold it gently by hand with a spatula until it smooths out.
  2. Use immediately.
Assemble
  1. Serve apples over waffles and top with whipped cream. Enjoy!
