Sprinkle Cajun spice over sausage slices. Heat oil and butter in a skillet, then add sausage. Allow sausage to brown then add peppers onions, and garlic. Cook for 1 minute stirring gently. Add tomatoes. With a slotted spoon, remove sausage and vegetables from the pan. While pan is still hot, pour in chicken broth. Cook on high for 3 to 5 minutes, scraping the bottom of the pan to deglaze. Reduce heat to medium-low and pour in cream, stirring constantly. Cook over medium-low heat for a few minutes, until cream starts to thicken. Add black pepper, cayenne pepper, and salt to taste.
