Creamy Cajun Pasta

  • 6 Andouille Sausagessliced
  • 3teaspoons Cajun Spice Mix
  • 1pound Penne Pasta Noodlescooked
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1 whole Green Bell PepperSeeded And Sliced
  • 1 whole Red Bell PepperSeeded And Sliced
  • ½ Large Red OnionSliced
  • 3cloves garlicMinced
  • 4 roma tomatoesDiced
  • 2cups chicken broth
  • 1cup heavy cream
  • Cayenne Pepper To Taste
  • freshly ground black pepperTo Taste
  • salt to taste
  • chopped fresh parsleyTo Taste
  1. Sprinkle Cajun spice over sausage slices. Heat oil and butter in a skillet, then add sausage. Allow sausage to brown then add peppers onions, and garlic. Cook for 1 minute stirring gently. Add tomatoes. With a slotted spoon, remove sausage and vegetables from the pan. While pan is still hot, pour in chicken broth. Cook on high for 3 to 5 minutes, scraping the bottom of the pan to deglaze. Reduce heat to medium-low and pour in cream, stirring constantly. Cook over medium-low heat for a few minutes, until cream starts to thicken. Add black pepper, cayenne pepper, and salt to taste.
  2. Finally, add sausage and vegetables to sauce. Stir and cook until mixture is hot. Add drained and cooked Penne Pasta and toss. Top with chopped fresh parsley.
