Ingredients
For the Taco Filling
  • 2pounds ground beef
  • 1tablespoon olive oil
  • 1 yellow onionfinely diced
  • 3 garlic clovesminced
  • 3tablespoons chili powder
  • 1 1/2teaspoons cumin
  • 1teaspoon smoked paprika
  • 1teaspoon Salt
  • 1teaspoon black pepper
  • 1/4teaspoon cayenne pepper
  • 1(15-ounce) can black beans
  • 1/2 limejuiced
  • 1/2bunch Fresh cilantrochopped
For the Lime Aioli
  • 1cup mayo
  • 2tablespoons lime juice
  • 1 garlic cloveminced
  • 1/2bunch Fresh cilantrochopped
To Assemble
  • 1 flour tortilla
  • 2 tostada shells
  • 1/3cup shredded cheddar cheese
  • 1cup baby spinach leaves
  • 1 roma tomatodiced
  • 1tablespoon olive oil
Instructions
For the Filling
  1. In a large skillet, heat the oil on medium heat and add the onion, cook until the onion begins to turn translucent, approximately 5 to 7 minutes. Add the beef and spices, stir to combine. Add the beans and stir to combine. Pour the lime juice over the filling. Cook for approximately 10 minutes, or until the beef is cooked through. Turn off the heat and stir in the cilantro.
For the Aioli
  1. In a small bowl, combine the mayonnaise, lime juice, lime zest, garlic, and cilantro. Stir until all ingredients are well combined.
For the Assembly
  1. Place a tostada shell in the center of the flour tortilla, evenly place the spinach leaves and cilantro on the shell, then add the taco filling, cheese, and tomatoes. Put the second tostada shell on top of the filled shell. Now fold half of flour tortilla over the filling and fold small sections over the shells all the way around until the entire flour tortilla is folded over the shells.
  2. Heat the oil in a medium skillet on medium heat. When the oil is hot, slip a large spatula under the folded side of the crunch wrap and slide the folded side down into the pan. Cover and cook for 5 to 7 minutes, or until it’s golden brown. Flip and cook the other side until golden brown.
  3. Dip in aioli and enjoy!
