Ingredients
For the Flatbread
  • Non-Stick Cooking Spray
  • 2cups all purpose flour
  • ¾teaspoon baking powder
  • ½teaspoon baking soda
  • 1/2teaspoon Salt
  • 1/2cup warm milk
  • ½cup plain greek yogurt
  • 1teaspoon honey
For the Toppings
  • 1tablespoon fresh lemon zest
  • 1 garlic cloveminced
  • 3tablespoons olive oil
  • 3slices baconchopped
  • 2cups freshly grated mozzarella cheese
  • 1cup broccolichopped
  • 1 lemonvery thinly sliced
  • 1teaspoon honeyfor drizzling
  • 1 handful micro greens for topping
  • 1teaspoon honeyfor drizzling

Instructions
For the Flatbread
  1. In a large bowl, whisk together the flour, baking powder, soda and salt. In another bowl, whisk together the milk, yogurt, and honey. Add half of the milk mixture to the dry ingredients and stir until the dough starts to come together. Add the remaining milk gradually, stirring and bringing the dough together with your hands.
  2. Place the dough in an oiled bowl and cover it. It won’t rise much! But let it rest.
  3. While it rests, prep the rest of the ingredients. Whisk together the lemon zest, garlic, and olive oil in a bowl.
  4. Heat a large skillet over medium heat and add the bacon. Cook until the bacon is just starting to crisp – do not cook until completely crunchy, because you want it to crisp in the oven. Remove it from the pan with a slotted spoon and place it on a paper towel.
  5. Preheat the oven to 450 degrees F. Spray the baking sheet with nonstick cooking spray.
  6. Once the dough has rested, remove it from the bowl and knead it a few times on a floured surface, using a little extra flour if it’s too sticky. Divide the dough into equal balls. Roll each ball out into an oval shape and place it on the baking sheet.
  7. Brush the dough with the lemon olive, sprinkle the cheese, then the broccoli, micro greens, lemon and bacon.
  8. Bake for 10 to 15 minutes, or until the dough is crisp and the cheese is golden. Remove the pizza from the oven and drizzle with honey. Slice and serve.
