Funfetti Waffle Cake with Whipped Cream and Fruit Compote

Ingredients
For the Waffles
  • 2 cups all purpose flour
  • 2teaspoons baking powder
  • 1 1/2teaspoons baking soda
  • 1teaspoon Salt
  • 1cup milk
  • 1/2cup vegetable oil
  • 2 large eggs
  • 2teaspoons vanilla extract
  • 1cup water
For the Whipped Cream
  • 2tablespoons sugar
  • 1cup heavy cream
For the Fruit Compote
  • 1pound seasonal fruit16 ounces
  • 2tablespoons honey
  • Dash Salt

Instructions
Making the Batter
  1. Crack eggs into colored cup and set aside while preparing the dry ingredients. Add all dry ingredients to the bowl and stir to incorporate everything. Once mixed, add in all wet ingredients and mix everything together until batter is smooth and chunk-less.
Making the Waffles
  1. Spray preheated waffle makers with nonstick spray. Using a portion scoop fill the center of waffle maker. Once fully cooked, use a fork to remove from waffle maker and set aside on a clear tray to cool.
Making the Fruit Compote
  1. In a medium saucepan, combine your fruit, honey and salt. Bring the mixture to a boil over medium-high heat, stirring occasionally.
Finishing the Compote
  1. Once boiling, reduce the heat to medium. Continue simmering, stirring often, until the compote has condensed to about half of its original volume.
  2. Remove the compote from the heat. At this point, you can adjust the taste and add more sweetener if needed. Let the compote cool for a few minutes before serving.
Making the Whipped Cream
  1. In a mixing bowl, place the sugar and the whipping cream. Whisk just until the cream reaches stiff peaks.
To Assemble
  1. Start by laying a waffle down. Using a red handle spatula, spread an even layer of whipped cream on top of the waffle. Finally, drizzle everything with the fruit compote. Enjoy!
