Taco Seasoning Mix
1tablespoonchili powder
1 ½teaspoonsground cumin
1teaspoonSalt

¼teaspoondried oregano
Homemade Salsa
5roma tomatoesdiced
1can diced tomatoes14.5 oz
2green onionsthinly sliced
¼red onionminced
1/3cupcilantrominced
1clovegarlicminced
2tablespoonslime juice
1/2teaspoonchili powder
1/4teaspoonground cumin
1/2teaspoonsugar
½teaspoonSalt
¼teaspoonblack pepper
MASTERS CLASSES ONLY: Black Bean and Corn Salad
2cans black beansdrained and rinsed, 15 oz.
1 1/2cupscorn kernelscanned
1/2red onionminced
1green bell pepperdiced
1/3cupcilantro leaveschopped
Salad Dressing
1/3cupolive oil
1/4cuplime juice
2teaspoonshoney
1teaspoonchili powder
1teaspooncumin
½teaspoonSalt
¼teaspoonblack pepper
2teaspoonshoney
1teaspoonchili powder
1teaspooncumin
½teaspoonSalt
¼teaspoonblack pepper
Instructions
Boil water in a pot and cook rice for 15-20 minutes.
In a large skillet, heat oil over medium-high heat until hot. Add peppers and onions, season with oregano, salt, and pepper.
Cook 5 to 6 minutes until slightly softened but still tender-crisp. Transfer to a bowl and set aside.
In the same skillet, add the ground beef. Cook until browned, drain excess grease, then sprinkle in the taco seasoning, stirring well. Add the water and stir, allowing it to simmer until the water is mostly absorbed. Remove from the heat.
To Make the Salsa
Combine all chopped vegetables into a bowl. Add seasonings and stir to combine. Adjust seasonings if needed.
To Assemble
Divide lettuce amongst to go containers. To each to go box, add rice, beans, cooked peppers and onions, seasoned ground beef, cheese, and salsa. Top off with sour cream and cilantro, serve with lime wedges.

In a small bowl, whisk together the cilantro, olive oil, lime juice, honey, chili powder, cumin and salt and pepper.
Pour the dressing over the beans and vegetables and toss gently to coat.
