Ground Beef Burrito Bowls

Ingredients
For the Bowls
  • 2tablespoons olive oil
  • 1 green bell peppersliced
  • 1/2 red onionsliced
  • 1pound ground beef
  • 1/3cup water
  • 3 to 4 cups romaine lettucechopped
  • 1 1/2cups Ricecooked
  • 1cup black beansrinsed and drained
  • 1/2cup shredded white cheddar cheese
  • sour creamcilantro, lime wedges, for serving (optional)
Taco Seasoning Mix
  • 1tablespoon chili powder
  • 1 ½teaspoons ground cumin
  • 1teaspoon Salt
  • 1teaspoon black pepper
  • ½teaspoon paprika
  • ¼teaspoon garlic powder
  • ¼teaspoon onion powder
  • ¼teaspoon dried oregano
Homemade Salsa
  • 5 roma tomatoesdiced
  • 1 can diced tomatoes14.5 oz
  • 2 green onionsthinly sliced
  • ¼ red onionminced
  • 1/3cup cilantrominced
  • 1clove garlicminced
  • 2tablespoons lime juice
  • 1/2teaspoon chili powder
  • 1/4teaspoon ground cumin
  • 1/2teaspoon sugar
  • ½teaspoon Salt
  • ¼teaspoon black pepper
MASTERS CLASSES ONLY: Black Bean and Corn Salad
  • 2 cans black beansdrained and rinsed, 15 oz.
  • 1 1/2cups corn kernelscanned
  • 1/2 red onionminced
  • 1 green bell pepperdiced
  • 1/3cup cilantro leaveschopped
Salad Dressing
  • 1/3cup olive oil
  • 1/4cup lime juice
  • 2teaspoons honey
  • 1teaspoon chili powder
  • 1teaspoon cumin
  • ½teaspoon Salt
  • ¼teaspoon black pepper
  • 2teaspoons honey
  • 1teaspoon chili powder
  • 1teaspoon cumin
  • ½teaspoon Salt
  • ¼teaspoon black pepper
Instructions
  1. Boil water in a pot and cook rice for 15-20 minutes.
  2. In a large skillet, heat oil over medium-high heat until hot. Add peppers and onions, season with oregano, salt, and pepper.
  3. Cook 5 to 6 minutes until slightly softened but still tender-crisp. Transfer to a bowl and set aside.
  4. In the same skillet, add the ground beef. Cook until browned, drain excess grease, then sprinkle in the taco seasoning, stirring well. Add the water and stir, allowing it to simmer until the water is mostly absorbed. Remove from the heat.
To Make the Salsa
  1. Combine all chopped vegetables into a bowl. Add seasonings and stir to combine. Adjust seasonings if needed.
To Assemble
  1. Divide lettuce amongst to go containers. To each to go box, add rice, beans, cooked peppers and onions, seasoned ground beef, cheese, and salsa. Top off with sour cream and cilantro, serve with lime wedges.
MASTERS CLASSES ONLY
  1. In a small bowl, whisk together the cilantro, olive oil, lime juice, honey, chili powder, cumin and salt and pepper.
  2. Pour the dressing over the beans and vegetables and toss gently to coat.
