Orange Chicken Lo Mein

Ingredients
  • 2 oranges
  • 3/4cup water
  • 1/2cup sugar
  • 1/2cup white vinegar
  • 1/4cup soy sauce
  • 1tsp sesame oil
  • 1tsp dried ginger
  • 1tsp sesame seeds
  • 1 1/2lbs boneless skinless chicken breasts
  • 1 egg
  • 1/2tsp each salt and coarsely ground black pepper
  • 1/2cup all purpose flour
  • 1/4cup cornstarch
  • 3tbsp vegetable oil
  • 3 garlic clovesminced
  • 6oz ramen noodles
  • 2cups broccoli & carrots
  • 3cups thinly sliced green cabbage
Instructions
  1. Whisk zest, juice, water, sugar, vinegar, soy sauce and dry ingredients in a bowl; Set aside.
  2. Mix egg, salt and pepper in a bowl and add chicken; toss to coat. Combine flour and cornstarch in a bowl. Add chicken mixture; toss to coat. Heat oil in a skillet.
  3. Remove chicken from flour mixture, shake off excess, and place into skillet. Cook 8-10 minutes or until chicken is golden brown and centers are no longer pink. Remove chicken; set aside.
  4. Add garlic and cook until fragrant. Add ramen noodles and orange mixture. Bring to a simmer and cook until noodles are softened. Add vegetables and cook 3-4 minutes or until tender. Add chicken to skillet; mix well to coat chicken.
