Pupusas with Curtido

Ingredients
For the Curtido
  • 1 green cabbageshredded
  • 1 carrotpeeled and shredded
  • 1 red oniondiced
  • 1teaspoon dried oregano
  • 1/4cup white vinegar
  • 1/2teaspoon Salt
  • 1/2teaspoon black pepper
For the Pupusas
  • 2cups masa flour
  • 1/2cup instant potato flakes
  • 1tablespoon Salt
  • 2cups waterwarm
  • 2cups shredded mozzarella cheese
  • 1 green bell pepperminced
  • 1/2cup vegetable oilfor cooking
Instructions
For the Curtido
  1. Add all the ingredients in a bowl and stir to combine. Set aside.
For the Pupusas
  1. In a bowl, mix the masa, potato flakes, and water together. Mix until the dough comes together and then knead until the dough is soft.
  2. Divide the dough into 10 balls. Working with one at a time, lightly flatten the ball until you have a pancake-like disc. Cup the disc in your hand to create a shallow dish to add the cheese and bell pepper. Then, fold the dough around the center, sealing the filling inside. Make sure to press this ball into a circle that is about ½ inch tall. Set aside.
  3. Heat oil in a non-stick pan using medium heat. Lightly coat the pupusas with oil using your fingers, then place in the pan and cook for 6-7 minutes on each side until they are light brown. Serve with the curtido.
