Spring Roll Bowls

Sweet Garlic Lime Sauce:
  • 3cloves garlic
  • 2tablespoons rice vinegar
  • 1/4cup agave or brown sugar
  • 1/3cup lime juice
  • 1/3cup vegetable oil
For The Spring Roll Bowls
  • Rice Noodles
  • Basilminced
  • Mintminced
  • cilantrominced
  • avocado
  • Carrotspeeled and Julienned
  • Juliennedpeeled and Julienned
  • bell pepperspeeled and Julienned
  • Cumberspeeled and Julienned
  • Shrimp, tofu, chicken(optional)
  • Shrimptofu, chicken
  1. Pulse the sauce ingredients together in a blender or food processor and set aside.
  2. Cook your rice noodles by soaking them in cold water for about 30 minutes. When they’re softened, transfer to a pot of boiling water for just a minute or two before quickly draining again. Set aside. This is my preferred method because it prevents them from getting overly sticky.
  3. Toss the noodles (hot or cold, your choice) with the sweet garlic lime sauce and all the other ingredients.
  4. Place the noodles on the bottom of the bowl. On top of the noodles place the veggies one at a time going around the bowl in a circular motion. Place your protein on top.
  5. Serve and enjoy!
