- 1 lb chicken breasts thinly sliced
- 1 Tbsp olive oil
- 3/4 cup brown sugar
- 1/3 cup soy sauce
- 2 Tbsp hoisin sauce
- 1 Tbsp sweet chili sauce
- 1 Tbsp fresh ginger peeled and grated
- 1 clove garlic minced
- 1/4 cup lime juice
- 1 tsp Salt
- 4 green onions chopped
- 1/2 tsp pepper
- garnish sesame seeds
- 1 tbsp sesame oil
- 1 tbsp oil
- 1/2 green bell pepper deseeded and chopped
- 2 green onions chopped
- 1 clove garlic minced
- 1 small carrot diced
- 1/2 tsp black pepper
- 1/4 cup soy sauce
- 2 cups cooked white rice

- Heat a large skillet to medium heat and add olive oil. Add the chicken, salt, and pepper. Cook chicken until brown on each side 3- 5 minutes. Set chicken aside on plate.
- In the skillet whisk together brown sugar, soy sauce, hoisin sauce, sweet chili sauce, ginger, garlic, and lime juice. Bring to a boil over medium heat for 1-2 minutes until sauce thickens.
- Add chicken back to the sauce and coat each side with the sauce. Garnish with sesame seeds and chopped green onions.
- Heat wok over medium heat with the sesame and vegetable oils. Add peppers, green onion, carrot, garlic, and sauté for 2 to 3 minutes.
- Add rice and soy sauce and cook, moving rice around constantly until done (About 2 minutes). Keep warm until serving.
