Sticky Chicken and Fried Rice

Sticky Chicken
  • 1lb chicken breaststhinly sliced
  • 1Tbsp olive oil
  • 3/4cup brown sugar
  • 1/3cup soy sauce
  • 2Tbsp hoisin sauce
  • 1Tbsp sweet chili sauce
  • 1Tbsp fresh gingerpeeled and grated
  • 1clove garlic minced
  • 1/4cup lime juice
  • 1tsp Salt
  • 4 green onionschopped
  • 1/2tsp pepper
  • garnish sesame seeds
Fried Rice
  • 1tbsp sesame oil
  • 1tbsp oil
  • 1/2 green bell pepperdeseeded and chopped
  • 2 green onionschopped
  • 1clove garlicminced
  • 1 small carrotdiced
  • 1/2tsp black pepper
  • 1/4cup soy sauce
  • 2cups cooked white rice
Sticky Chicken
  1. Heat a large skillet to medium heat and add olive oil. Add the chicken, salt, and pepper. Cook chicken until brown on each side 3- 5 minutes. Set chicken aside on plate.
  2. In the skillet whisk together brown sugar, soy sauce, hoisin sauce, sweet chili sauce, ginger, garlic, and lime juice. Bring to a boil over medium heat for 1-2 minutes until sauce thickens.
  3. Add chicken back to the sauce and coat each side with the sauce. Garnish with sesame seeds and chopped green onions.
Fried Rice
  1. Heat wok over medium heat with the sesame and vegetable oils. Add peppers, green onion, carrot, garlic, and sauté for 2 to 3 minutes.
  2. Add rice and soy sauce and cook, moving rice around constantly until done (About 2 minutes). Keep warm until serving.
