- 2 tablespoons vegetable oil for cooking
- 1 inch package tofu cut into squares, 1/2thick
- 1 teaspoon Salt
- 1 ½ tablespoons hot water
- 1/2 teaspoon sugar
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon white pepper
- ¼ cup vegetable oil
- 1- inch fresh ginger mined
- 2 cloves garlic minced
- 3 green onions green and white parts separated
- 1 cup mushrooms slied
- 1 cup snow peas cut in half
- 1- pound wide rice noodles
- 1 tablespoon mirin
- 1 ½ cups bean sprouts
- 1- pound wide rice noodles

- Bring a pot of water to a boil. Add rice noodles and cook 2-3 minutes or until el dente. Drain and set aside.
- In a small bowl, combine the salt, sugar, hot water. Whisk until the sugar and is dissolved. Then add the soy sauce, oyster sauce, sesame oil and white pepper. Set aside.
- Heat a non-stick skillet with oil over medium heat. Once oil is hot, place tofu in pan. Cook on each side for 2-3 minutes, or until it is golden brown and crispy. Add in half the sauce. Combine, and cook until sauce thickens.
- Heat a large skillet over medium high heat and add the vegetable oil. Once oil is heated, add the ginger. Let the ginger fry to 10 seconds to infuse the oil; then stir in the garlic and the white portions of the green onions. Next, add the mushrooms and snow peas. Stir fry for another minute.
- Turn heat up to high. Add the rice noodles and mirin. Allow the noodles to fry on high heat for 30 to 60 seconds; then pour the rest of the sauce mixture over the noodles. Continue gently stir-frying the noodles using a scooping motion for 2 minutes. Make sure you scrape the bottom of the wok with your spatula to prevent the noodles from sticking. The high heat of the wok should also prevent the noodles from sticking.
- Add the bean sprouts and remaining green onions. Continue stir-frying until the noodles are heated through and the snow peas turn a bright green.
- Serve Chow Fun with the Tofu Nuggets on top. Enjoy!
