FRIED RICE HISTORY
The origins of rice go so far back that it is hard to know exactly when this delicious food was first cooked. Though some believe that fried rice was first cooked sometime during the Sui dynasty, or A.D. 589-618, in Yangzhou which is a city in the eastern Jiangsu province. Jiangsu is located in the northeast part of China, stretching along the Yellow Sea.
Fried rice from Yangzhou, also called Yangchow, is considered the ideal fried rice which all other Chinese rice dishes are compared. This dish is traditionally bunches of fluffy rice mixed with roasted pork, scallions, peas, and prawns.
